INGREDIENTS
  • 2 sweet potatoes
  • 1 teaspoon oil
  • 1/4 cup (30 grams) mozzarella, shredded
  • 6 slices bacon
  • 2 small mushrooms
  • 1/2 cup (125 grams) tomato sauce
  • 1 egg
  • 1 teaspoon dried oregano
PREPARATION
  • Preheat the oven to 350 degrees F/ 180 degrees C.
  • Slice the sweet potatoes in thin slices.
  • Add the oil in a cast-iron skillet.
  • Place the sweet potato slices on the bottom of the skillet in circles, so that they cover the whole skillet.
  • Sprinkle the shredded mozzarella on top of the potato slices.
  • Add the 3 bacon slices in a flower pattern.
  • Slice the mushrooms and add the pieces over the bacon.
  • Pour the tomato sauce over all ingredients.
  • Crack an egg in the middle of the skillet.
  • Sprinkle dried oregano over the dish.
  • Sprinkle another layer of shredded mozzarella.
  • Cook in the oven for 20 minutes.
