1 package of Hormel smoked sausage (Peel if necessary, and slice into rounds)
1 large onion, peeled and chopped
5 large potatoes, peeled and chopped into 1/2 inch cubes
olive oil (I went with Pompeian extra virgin)
fine Morton sea salt
freshly ground black pepper
McCormick sweet paprika
McCormick dried thyme (about half a teaspoon AT MOST–adjust to taste)
a handful of grated Kraft cheddar cheese


Pre-boil potatoes for 5-10 minutes before chopping them.

Preheat oven to 350 degrees. Spray a baking pan with cooking spray.

In a large bowl, combine all chopped and sliced ingredients, season to taste with salt, pepper, paprika and thyme. Mix until everything is well coated.

Add the mixture into the baking pan, drizzle with olive oil. Bake in the oven for 20 to 30 minutes. If it starts to brown too quickly, cover with foil. The baking time varies depending on how long you pre-boiled the potatoes (check for doneness with a fork).

A few minutes before it’s done, remove the baking pan from the oven. Sprinkle the grated cheddar on top and bake for a few more minutes, until cheese has melted.
