Pudding
  1. 2 cups sugar
  2. 1/2 cup butter
  3. 2 eggs
  4. 4 large unpeeled apples, grated (4 cups)
  5. 2 cups flour
  6. 2 tsp baking soda
  7. 2 tsp cinnamon
  8. 1/2 tsp salt
  9. 1/2 tsp nutmeg
  10. 1 cup nuts (optional)
Sauce
  1. 1/2 cup butter
  2. 1 cup sugar
  3. 1/2 cup light cream or evaporated milk
  4. 1 1/2 tsp vanilla
  5. dash of nutmeg
Instructions
  1. Preheat oven to 350° and line a 2 qt baking dish with foil for easy clean-up and removal.
  2. For pudding, cream together sugar and butter. Add egg, then apples.
  3. Mix in dry ingredients and pour batter into prepared baking dish.
  4. Bake for about 40 minutes, or until inserted toothpick comes out clean.
  5. Combine butter, sugar and cream in saucepan and cook on low for 10 minutes. Do not boil.
  6. Remove sauce from heat and stir in vanilla and nutmeg.
  7. Pour sauce over cut pudding squares and enjoy!
